Recipe - Smoked Feta Ravioli
Ingredients: 1 pack of fresh lasagna noodles (available here) 1 egg 1 pack of Local Quality Sheep Milk Smoked Feta 1/2 cup cottage cheese salt & pepper Option: add a Tomato Sage Sauce (pictured above) Step one, crumble feta and mix in bowl with cottage cheese. Add salt and pepper to taste. Set aside. Step two, crack egg into a small dish, whip gently until colour is even, set aside. Step three, with a rolling pin make the first 2 noodles as thin as you can (this is not necessary) Step four, using a spoon add a small dollop of filling onto the pasta, keep them 2-3 inches apart & repeat while room allows. Step five, brush all the pasta around filling with the whipped egg Step six, gently place the second sheet of pasta on top, press area around filling to get as much air out as possible. Step seven, cut in between each ravioli to separate, with a fork press the pasta around the filling together to make sure it seals. Trim as necessary. Step eight, repeat above until all filling is used. To cook; Bring salted water to a hard boil, add ravioli, wait 3-4 minutes. Remove from water and rinse pasta. Plate and drizzle hot sauce of your choice on top. Done! This raw goat Milk cheese is so soft it will melt in your mouth with a subtle salty taste.
